Tall Horse Merlot (The Purple One) is a delightful journey of lofty blackberry fruit fragrances and flavours, alluring spicy oak top-notes and supple tannins that linger with graceful intensity. Fermented on the skins for 7 days at 24 – 28°C with three aerations per day. After pressing, the young wine is matured on French oak staves for 3 months where malolactic fermentation is completed.

Tall Horse Chardonnay (The Yellow One) is a charming white wine with a safari of juicy tropical and citrus fruit fragrances and flavours gracefully lingering with elevated freshness. The grapes were fermented at 14-16°C in stainless steel tanks on lightly toasted French and American oak for complexity and dimension. The young wine was racked and left on the fine lees for a further 2 months inviting further integration and intrigue before final filtration and bottling at our cellars in Wellington.

Tall Horse Merlot (The Blue One) is a deliciously sleek medium-bodied Merlot with a streak of lithe juicy cherry and plum fruit and a dash of well-integrated oak.
Fermented on the skins for 7 days at 24 – 28°C with three aerations to unleash inherent colours and flavours. Once dry, the young wine is pressed and placed on French oak before malolactic fermentation and left for a further 3 months for best integration.

Tall Horse Pinotage (The Red One) is Dark red in colour with sweet black fruit flavours on the nose. On the palate the wine has soft, sweet tannins with ripe fruit flavours. The wood is well integrated and gives coffee and chocolate flavours on the nose and palate. Fermented on the skins for 7 days at 24 – 28°C with three aerations per day. After pressing, the young wine is matured on French oak staves for 3 months where malolactic fermentation is completed.

Tall Horse Pinotage Rose (The Pink One) is made from the perfect Pinotage grapes; Pinotage rose is a soft, irresistible rose wine with notes of ripe red berries & a hint of spice on the palate giving way to a fresh & lively finish. Grapes are hand harvested and crushed, then left on the skins for 2 hours to capture a delicate sunset pink hue and generous crushed red berry flavours then drawn off the skins and fermented under cool cellar conditions until a mere dash of residual sugar remains

Tall Horse Sauvignon Blanc (The Greenish Blue One) is a brisk white wine with a dash of herbaceous grassland aromas and flavours that race across the palate stretching to a lively fresh finish. The grapes were vinified separately at 13˚C in stainless steel tanks until dry, then left on the lees until final blending, filtration and bottling at our cellars in Wellington.

Tall Horse Shiraz (The Orange One) is full of rich, ripe well rounded pronounced ripe fruit flavours with an untamed spicy edge and deep rich colour. Supple and smooth yet still well structured. Fermented on the skins for 7 days at 24 – 28°C with three aerations per day. After pressing, the young wine is matured on oak where malolactic fermentation is completed. The wine is left on the staves for a further 3 months. A very light filtration before bottling ensures the conservation of intrinsic cultivar traits
